Gourmet Dinner in Less Than An Hour

Cheers to Big Sky and a great girls ski weekend!

After a great day on the slopes, we were happy to kick back and eat dinner at home.  With limited ingredients and some improvisation, we whipped together a delicious meal.

If you don’t have all of the required ingredients or equipment, just remember to think out of the ice box like this:

1) Lemon Chicken - Since there was no grill, we baked the chicken in the oven.

2) Cumin Roasted Carrots & Cauliflower - The grocery did not have serano peppers, so we used a jalapeño pepper in the cumin dressing for both carrots and the added cauliflower (we skipped the salad part).

3) Baked Acorn Squash - Without brown sugar or butter in the house, we were able to sweeten the squash with honey and olive oil.

Here’s to spring skiing and the amazing women who truly know how to shred!
