Did you know that 2 cups of arugula has more than 50% of the vitamin K needs for the day?  This powerful cruciferous veggie, also known as rocket or rucola, can help prevent osteoporosis, cancer, and diabetes.  The arugula in our home garden has been growing like a weed, so I decided to whip up some tangy, nutrient dense pesto.  This flavorful sauce takes minutes, a few ingredients, and has a vibrant flavor and color.

Ingredients

  • 4 Cups Arugula/Rocket Greens, packed down
  • 1 1/2 Cups Grated Parmesan Cheese
  • 2 Garlic Cloves, Minced
  • 1/2 Cup Walnut Pieces
  • 1/2 Cup Pine Nuts
  • 1 tsp Sea Salt
  • 2 Cups Extra Virgin Olive Oil

Method

Step 1

Combine nuts, garlic and parmesan cheese in food processor.

Step 2

Add arugula.

Step 3

While motor is running, slowly pour olive oil into food processor. Season with salt.
