The arugula in our home garden has been growing like a weed, so I decided to whip up some tangy, nutrient dense pesto. This flavorful sauce takes minutes, a few ingredients, and has a vibrant flavor and color.
- 4 Cups Arugula/Rocket Greens, packed down
- 1 1/2 Cups Grated Parmesan Cheese
- 2 Garlic Cloves, Minced
- 1/2 Cup Walnut Pieces
- 1/2 Cup Pine Nuts
- 1 tsp Sea Salt
- 2 Cups Extra Virgin Olive Oil
Combine nuts, garlic and parmesan cheese in food processor.
While motor is running, slowly pour olive oil into food processor. Season with salt.
