Arugula Watermelon Salad has a wonderful balance of spicy and sweet.  This is a perfect summer salad on a hot day.

Ingredients

  • 4 cups arugula
  • 1 cup chopped watermelon
  • 2 Tablespoons chopped mint
  • 1/2 cup chopped fennel
  • 1/4 cup crumbled goat cheese
  • 1/4 cup candied or plain pecans
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil

Method

Step 1

Place all ingredients in a bowl and serve with olive oil and balsamic vinegar on top.

Think Out of the Ice Box: Try swapping out the goat cheese for feta cheese for a sharper flavor.
