Baked Oregano-Thyme Chicken Breast

Dinner can be delicious, healthy and totally do-able in 30 minutes if you plan ahead of time.  Baked Oregano-Thyme Chicken is simple & straightforward.


  • 2 pounds boneless, skinless chicken breast
  • Juice of 2 Lemons
  • 1/3 C Grapeseed Oil
  • 1 tsp Sea Salt
  • 1 tsp fresh ground Black Pepper
  • 1 T dried Oregano
  • 1 T dried Thyme


Step 1

Slice chicken breasts in half to reduce the thickness for pounding. Place halved chicken breasts in between two pieces of plastic wrap and pound thin (to about 1/3").

Step 2

Combine lemon juice, grapeseed oil, salt, pepper, oregano + thyme in a glass bowl. Add chicken breast. Cover and refrigerate about 3 hours to marinate.

Step 3

Preheat oven to 400 degrees F. Line a baking sheet with foil and place a roasting rack on top. Lay chicken breast out evenly on rack and roast in oven for about 25 minutes.

Step 4

Internal temperature of chicken should read 165 degrees F.

Think Out of the Ice Box: Eat as is or top with your favorite BBQ sauce.  This makes a big batch, so save the leftovers for Tarragon Chicken Salad.
