Beet & Orange Salad with Goat Cheese2016-06-16

The summer garden is bursting with beets that pair delightfully with juicy orange segments. Top it off with a sprinkle of walnuts & goat cheese for a splendid salad.
- 1 large red beet
- 1 large yellow beet
- 2 oranges, peeled & segmented
- 1/4 C goat cheese crumbles
- 1/4 C chopped walnuts
- Balsamic Vinegar to taste
- Salt & Pepper to taste
Peel & quarter beets. Place beets in a pot of salted, boiling water. Cook beets about 15 - 20 minutes, until tender.
Place quartered beets and oranges into a bowl. Sprinkle with goat cheese & walnut pieces. Drizzle with balsamic vinegar. Season with salt & pepper.
