Buttermilk Ranch Dressing2014-03-03

This dressing is delicious on butter or romaine lettuce or as a dip for fresh cut vegetables. It keeps fresh for up to one week refrigerated.
- 3 Scallions, Thinly sliced
- ½ C Dill, fresh
- 2 T Freshly Squeezed Lemon Juice
- 1 ½ T Dijon mustard
- 1 T Olive Oil
- 2 Garlic Cloves, Chopped
- 2 ½ tsp. Kosher Salt
- 1 tsp. Freshly Ground Black Pepper
- 1 C Mayonnaise, (see homemade mayo recipe)
- ½ C Greek Yogurt
- ½ C Buttermilk
Place scallions, dill, lemon juice, mustard, olive oil, garlic, S &P in food processor. Puree.
Add mayonnaise, yogurt & buttermilk until smooth.

Short Cut: Just place all of the ingredients into your Vita-mix and puree in one full swoop.
Alternative Method: The garlic can easily be omitted without altering the final result.
