Cashew Bars

Cashew Bars are power packed with protein from nuts and naturally sweet from dates and maple syrup.  These make delicious dessert bites, breakfast on the run or a quick afternoon snack.


  • 1 1/2 C Raw Cashews
  • 1 1/2 C Raw Dates, pitted and chopped
  • 1/2 C Almond Butter
  • 1/2 C Almond or Coconut Flour
  • 1/2 C Shredded, Unsweetened Coconut
  • 1/2 tsp Almond Extract
  • 1/2 C Maple Syrup


Step 1

Grind cashews into a fine meal in Vitamin or food processor.

Step 2

Add all other ingredients and mix together until it forms a sticky ball.

Step 3

Line baking sheet/pan with wax paper and evenly flatten dough onto pan.

Step 4

Refrigerate at least 6 hours. Cut into bite size squares. Store in refrigerator covered in wax paper for 7 - 10 days.

Short Cut: Make one day ahead of time, cut into squares and store in refrigerator.

Think Out of the Ice Box: Try using peanut butter in place of almond butter.
