Cashew Bars are power packed with protein from nuts and naturally sweet from dates and maple syrup. These make delicious dessert bites, breakfast on the run or a quick afternoon snack.
- 1 1/2 C Raw Cashews
- 1 1/2 C Raw Dates, pitted and chopped
- 1/2 C Almond Butter
- 1/2 C Almond or Coconut Flour
- 1/2 C Shredded, Unsweetened Coconut
- 1/2 tsp Almond Extract
- 1/2 C Maple Syrup
Grind cashews into a fine meal in Vitamin or food processor.
Add all other ingredients and mix together until it forms a sticky ball.
Line baking sheet/pan with wax paper and evenly flatten dough onto pan.
Refrigerate at least 6 hours. Cut into bite size squares. Store in refrigerator covered in wax paper for 7 - 10 days.
