Coconut Macaroons for Passover

A friend introduced me to this simple recipe.  I was sold after she said it was only four ingredients!  (I added mini chocolate chips so that is actually 5 ingredients…but who’s counting?!) If you like coconut, then you will LOVE this even if it isn’t Passover.


  • 4 Cups Unsweetened Shredded Coconut
  • 1 - 14 ounce can Sweetened Condensed Milk
  • 2 Egg Whites
  • 1 tsp Vanilla Extract
  • 1 cup Mini Chocolate Chips


Step 1

Combine coconut, condensed milk and vanilla in a large bowl.

Step 2

In a separate bowl, whip the egg whites until stiff. Fold into coconut mixture.

Step 3

Add chocolate chips and stir.

Step 4

Drop the batter on baking sheet lined with parchment paper (each cookie should be about 2 T.) Bake 25 minutes @ 325 degrees or until coconut is golden brown.

Short Cut: Buy it at the store!

Alternative Method: Use Almond Extract in place of Vanilla Extract.
