The next day’s lunch: I used the leftover salsa to garnish tuna salad  and dressed it with Lemon White Balsamic Vinegar & Olive Oil.  It was still fresh and flavorful and FAST!IMG_1024

 

 

 

 

 

 

 

Ingredients

  • 1 Mango, peeled & diced
  • 1 T Chopped Red Onion
  • 1 Cucumber, peeled, seeded & diced
  • 1 Lime, juiced
  • 2 T Fresh Mint Leaves, finely chopped
  • 1 Jalapeño Pepper, seeded & diced
  • Salt
  • Pepper

Method

Step 1

Combine all the ingredients in a bowl and season with salt & pepper. It's that easy!
