Cucumber Mango Salsa

The next day’s lunch: I used the leftover salsa to garnish tuna salad and dressed it with Lemon White Balsamic Vinegar & Olive Oil. It was still fresh and flavorful and FAST!
- 1 Mango, peeled & diced
- 1 T Chopped Red Onion
- 1 Cucumber, peeled, seeded & diced
- 1 Lime, juiced
- 2 T Fresh Mint Leaves, finely chopped
- 1 Jalapeño Pepper, seeded & diced
Combine all the ingredients in a bowl and season with salt & pepper. It's that easy!
