Eggless Caesar Salad

The Caesar Salad is a good introduction to salad.  I like serving this version to kids since it does not have a raw egg like the traditional caesar salad dressing.


  • 1 cup grated Parmesan Cheese
  • 2 Lemons Juiced
  • 1 Garlic Clove, minced
  • 2 Tablespoons Dijon Mustard
  • 4 Anchovy Filets, chopped
  • 4 hearts Romaine Lettuce, chopped
  • 3/4 cup Olive Oil
  • Salt & Pepper


Step 1

In a food processor combine 1 cup cheese, lemon juice, minced garlic, mustard & anchovies. Run about 20 seconds.

Step 2

As the food processor is running, drizzle in the olive oil. Continue to process a few seconds. Season with S & P to taste.

Step 3

In a large bowl, toss the torn lettuce leaves with dressing. Serve immediately.

Short Cut: Purchase the pre-washed, chopped romaine in a bag.

Think Out of the Ice Box (Alternative Method): If you don’t have romaine lettuce on hand, then try using mixed greens or bibb lettuce.
