Grilled Peach & Zucchini Platter with Garden Tomatoes2016-08-13

This recipe is literally what the title says…simple, fresh, and bursting with summer flavors.
- 2 peaches, halved and pitted
- 1 zucchini, sliced into 1/8" rounds
- 2 tomatoes, sliced
- handful fresh basil, chiffonade
- freshly grated parmesan cheese, to taste
- salt & pepper to taste
- olive oil for drizzling
- balsamic vinegar for drizzling
Lightly brush peaches and zucchini with olive oil. Brush grill with vegetable oil so produce does not stick. Grill peaches and zucchini on medium heat for 4 minutes per side (or until you achieve nice grill marks).
Layer on a platter with tomatoes and season with salt & pepper. Garnish with basil, and then drizzle olive oil and balsamic vinegar for flavor. Finish with freshly grated parmesan cheese.
Serve immediately or at room temperature.
