My Favorite Omelet

This is seriously the easiest, well-balanced meal a person can prepare.  Plus, who doesn’t love breakfast for dinner?  I mean, really?!


  • 3 eggs
  • 2 T milk
  • salt and pepper TT
  • 1/8 cup chopped or shredded buffalo mozzarella cheese
  • 1/8 C sliced cherry tomatoes
  • handful basil, chiffonade
  • 1 T butter


Step 1

Whisk together eggs, milk, salt & pepper.

Step 2

Heat non-stick pan over medium heat and melt butter. Add egg mixture and cook, pushing the sides toward the center. Once the egg resembles a yellow pancake add the tomatoes, mozzarella & basil.

Step 3

Place under the broiler on low heat for a minute to give the eggs a golden brown top.

Step 4

Immediately place on a plate and serve with fruit or mixed greens and toast.
