Oprah’s Corn Chowder2014-11-20

This soup recipe is from the cookbook In The Kitchen with Rosie: Oprah’s Favorite Recipes. Rosie Daley, Oprah’s former personal chef, focuses on healthy, low fat foods. This “creamy” corn chowder is sans cream or butter, but full of flavor.
- 1 Onion, small dice
- 9 C Fresh or Frozen Corn Kernels
- 1 Red Bell Pepper, small dice
- 4 1/2 C Chicken Broth
- 3/4 tsp Dried Thyme
- 3/4 tsp Fresh Rosemary, chopped
- 1/4 tsp Fresh Ground Pepper
- Handful Fresh Basil, chiffonade
- Pinch of Cayenne Pepper
- 1 pkg Chicken Sausage, sliced & sautéed in non-stick pan
Heat saucepan over medium-high heat and cover bottom with a few tablespoons of olive oil. Saute onions for about 5 minutes until translucent.
Add 6 cups of corn and sauté an additional 5 minutes.
Add 1 qt chicken stock and use immersion blender or transfer to a blender and puree until smooth.
Return soup to saucepan and add red pepper, thyme, rosemary, pepper, pinch of cayenne and remainder of both corn & chicken stock.
Stir and cook over low heat for about 10 more minutes.
Garnish with basil and chicken sausage.

Short Cut: Make this ahead of time, cool, and freeze in individual serving size containers.
Think Out of The Icebox: Use vegetable broth and skip the chicken sausage if you want this to be a vegetarian/vegan dish.
