Queen of Hearts Salad

If you love artichoke hearts and hearts of palm, then this quick and easy salad is for you.  The Za’atar, a Middle Eastern spice mixture, gives it a uniquely delightful flavor.

How to make Za’atar Spice at Home


  • 1 cup roasted & chopped Asparagus
  • 1/2 cup sliced Cherry Tomatoes
  • 3 T chopped Basil
  • 3 Hearts of Palm, sliced
  • 1 can of quartered Artichoke Hearts
  • 1 can of Red Kidney Beans, drained and rinsed
  • Juice of 1 Lemon
  • 2 T Olive Oil
  • 1 T Za'atar (an Israeli spice mix)
  • pinch of Salt & Pepper


Step 1

Roast the asparagus: Place asparagus on a baking sheet and drizzle with a few drops of olive oil and lightly season with a pinch of salt & pepper. Roast in 400 degree oven for about 10 minutes. Let cool and slice diagonally.

Step 2

Combine asparagus, tomatoes, basil, hearts of palm, artichoke hearts and kidney beans in a salad bowl.

Step 3

In a separate small bowl, whisk together lemon juice, olive oil, za'atar and salt & pepper.

Step 4

Drizzle dressing onto salad and toss. Eat chilled or at room temperature.

Think Out of the Ice Box: Try using sun-dried tomatoes or roasted red peppers instead of cherry tomatoes.
