Summer strawberries add a sweet, colorful element to this savory salmon dish. I created this dish for a recent dinner party and my guests were pleasantly surprised by this unconventional version of salsa. The strawberries, garlic scape and mint create a contrast of colors and flavors that truly wake up your palate. Serve this salsa over Soy Ginger Marinated Salmon filets.
- 1 nectarine, finely chopped
- 2 cups, sliced strawberries
- 1 garlic scape, finely sliced
- 1 lime, tested & juiced
- 2 T chopped fresh mint
- 1.5 tsp balsamic vinegar
- salt & pepper to taste
- 8, 4 ounce pieces of Ginger Soy Marinated Salmon
Layer all ingredients in a mason jar and pour over balsamic vinegar.
Screw lid on tightly and shake. Eat immediately or let sit overnight in refrigerator.
Serve on top of Soy Ginger Marinated Salmon
Short Cut: Make this one day ahead of time and let the ingredients marinate to create a deeper flavor.
