Tarragon Chicken Salad2017-04-03

When you have leftover chicken, make chicken salad. This recipe doesn’t use mayo and the tarragon gives it a unique flavor.
- 4 C chopped Baked Oregano-Thyme Chicken Breast [see recipe above]
- 1 C sliced Seedless Red Grapes
- 1 C sliced Celery
- 1/2 C Raw Pecans
- 1/4 C Vegenaise
- 1 T Dijon Mustard
- 2 T chopped Tarragon
- a few pinches of freshly ground Black Pepper
Mix vegenaise, dijon mustard and tarragon together in a bowl. Add chicken and mix. Add celery, grapes & pecans and combine evenly.
Think Out of the Ice Box: This is using leftovers to create an entirely new dish. And did I mention it takes less than 10 minutes?!
