Tarragon Chicken Salad

Tarragon Chicken Salad

When you have leftover chicken, make chicken salad.  This recipe doesn’t use mayo and the tarragon gives it a unique flavor.

Ingredients

  • 4 C chopped Baked Oregano-Thyme Chicken Breast [see recipe above]
  • 1 C sliced Seedless Red Grapes
  • 1 C sliced Celery
  • 1/2 C Raw Pecans
  • 1/4 C Vegenaise
  • 1 T Dijon Mustard
  • 2 T chopped Tarragon
  • a few pinches of freshly ground Black Pepper

Method

Step 1

Mix vegenaise, dijon mustard and tarragon together in a bowl. Add chicken and mix. Add celery, grapes & pecans and combine evenly.

Think Out of the Ice Box: This is using leftovers to create an entirely new dish.  And did I mention it takes less than 10 minutes?!
