Shrimp Black Bean Quesadillas
This is a crowd pleaser for diners of all ages and it is a fast week night pick! I serve Shrimp Black Bean Quesadillas with Guacamole, Cucumber Mango Salsa & tortilla chips. The leftovers make an excellent salad or snack the next day too. My son is allergic to shrimp so I use turkey instead for him (that may be one of the easiest go-to recipes in my repertoire aside from PB&J or cereal).
