Fast, Flavorful Weeknight Meal
I was in a blunder the other night and had about 30 minutes to make dinner. Luckily the veggies were already prepped. I popped a few sweet potatoes in the oven and got cooking. Since I had not marinated my chicken, I decided sautéing was the best route for efficiency and flavor. The result was Chicken Mushroom Saute with Tomato Sauce & Chickpeas, Baked Sweet Potatoes and Roasted Broccoli & Hericot Vert.
This definitely belongs in the weeknight dinner rotation…and it’s Dairy Free too (and can easily be made Gluten-Free by switching out the wheat flour for an alternative such as rice flour)!
