That’s the way the cherry crumbles…

Cherry cobbler makes a delicious summer dessert (or breakfast if you are my 17 year old son Jake) that requires minimal ingredients and little effort in the kitchen.  If you prefer a custard style sweet, then try the cherry clafoutis recipe below.

Individual Cherry Crumbles

Ingredients

Yield: 8 servings
  • For the cherry filling:
  • 5 cups pitted cherries
  • zest & juice of 1 lemon
  • 1/4 cup sugar
  • 1 teaspoon corn starch
  • For the crumble topping
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup light brown sugar, lightly packed
  • ½ teaspoon kosher salt
  • ¼ pound (1 stick) cold unsalted butter, diced

Instructions

Step 1

Combine cherries, lemon zest, lemon juice, 1/2 cup sugar, and corn starch.

Step 2

Spoon the mixture into prepared ramekins.

Step 3

Combine 1 cup flour, oats, brown sugar, salt and the butter in the bowl of an electric mixer fitted with a paddle attachment. Mix on low speed until the butter is the size of peas.

Step 4

Sprinkle evenly over the fruit. Place the ramekins on a sheet pan lined with parchment paper and bake for 40 to 45 minutes, until the tops are browned and crisp and the juices are bubbly. Serve warm or at room temperature.

Cherry Clafoutis

This is a classic French dessert originating from the Alsace region traditionally made with cherries. I first made this as a culinary student in my Classical European class. It is sweet, but light. The leftovers are perfect in the morning with a cappuccino.

Ingredients

Yield: 6 servings
  • 1/2 C All-Purpose Flour
  • 1/4 C + 1 T Sugar
  • Salt
  • 3 Eggs
  • 3 T Unsalted Butter, melted
  • zest of 1 Lemon
  • 1/4 C + 2 T Milk
  • 3 C pitted, halved cherries
  • Confectioners' Sugar, for dusting

Instructions

Step 1

Preheat oven to 350 degrees F. Butter a 9" gratin dish.

Step 2

In a bowl, whisk flour, sugar + a pinch of salt. Whisk in eggs, butter & lemon zest until smooth. Add milk and whisk lightly for an additional 3 minutes


Step 3

Pour batter into gratin dish and top with cherries. Bake for about 30 minutes, until clafoutis is set & golden. Let cool slightly and dust with confectioners sugar.

Notes

Short Cut: Mix the batter ahead of time and pop in the oven when your company arrives for dinner.


Think Out of the Ice Box: Substitute cherries with seasonal berries.
