Chocolate Chip Shana Banana Bread

This yummy banana bread recipe is from my longtime camp friend Shana.  My protege in the kitchen has become quite the baker, and she decided to convert some mushy bananas into a delicious breakfast bread.  This goes perfectly with a hot cup of coffee.

Ingredients

Yield: 1 loaf
  • 1 3/4 C flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2/3 C sugar
  • 1/3 C unsalted butter
  • 2 eggs
  • 2 T milk
  • 1 C chocolate chips
  • 2 very ripe bananas

Instructions

Step 1

Mix flour, baking powder, baking soda, and salt in a large bowl.

Step 2

In a separate bowl, beat together sugar and butter. Add eggs and milk. Add bananas.

Step 3

Combine dry ingredients and wet ingredients until mixed together. Stir in chocolate chips.

Step 4

Pour batter into a greased bread pan. Bake 1 hour and 10 minutes in oven at 350 degrees.

Step 5

Let bread cool completely in pan. Slice and enjoy.

Short Cut: Make a day ahead of time or freeze and defrost when needed.
