This was my first garden salad of the season.  These gorgeous little green gems are topped with radish thinnings and roasted garbanzo beans.

Garden Greens with Garbanzo Beans

These gorgeous little green gems are the first garden greens of the season!

Ingredients

Yield: 4
  • 6 cups fresh greens, lettuce variety from garden
  • handful radish thinking's
  • 1 can garbanzo beans, rinsed and drained
  • 1 T olive oil
  • 1 T Everything But The Bagel seasoning

Instructions

Step 1

Toss drained garbanzo beans with olive oil and seasoning. Place on parchment lined baking sheet. Roast for 10-15 minutes in 400 degree oven.

Step 2

Place greens, radish thinnings and roasted garbanzo beans in a salad bowl.


Notes

Enjoy with your favorite dressing. I'm loving this with Vegan Green Goddess Dressing!
