Gourmet Dinner in Less Than An Hour

Cheers to Big Sky and a great girls ski weekend!

After a great day on the slopes, we were happy to kick back and eat dinner at home.  With limited ingredients and some improvisation, we whipped together a delicious meal.

If you don’t have all of the required ingredients or equipment, just remember to think out of the ice box like this:

1) Lemon Chicken – Since there was no grill, we baked the chicken in the oven.

2) Cumin Roasted Carrots & Cauliflower – The grocery did not have serano peppers, so we used a jalapeño pepper in the cumin dressing for both carrots and the added cauliflower (we skipped the salad part).

3) Baked Acorn Squash – Without brown sugar or butter in the house, we were able to sweeten the squash with honey and olive oil.
