Grilled Asparagus with Lemon Vinaigrette

Asparagus + grill = spring! This vibrant vegetable dish takes minutes too prepare and only has 5 ingredients (salt & pepper not included).

Ingredients

Yield: 6 servings
  • 2 pounds asparagus, ends trimmed (snapped) off
  • 2 lemons
  • 1 T dijon mustard
  • 1/2 C olive oil
  • 1 bunch scallions (or ramps if in season)
  • sea salt & freshly ground black pepper to taste

Instructions

Step 1

Trim or snap ends off of asparagus, arrange on sheet pan, drizzle with olive oil and season lightly with sea salt & freshly ground pepper.

Step 2

Slice scallions or ramps horizontally into 1/2" pieces. Place in a bed of aluminum foil, drizzle with olive oil and season lightly with sea salt & freshly ground black pepper. Seal edges of foil together creating a closed pouch.

Step 3

Zest & juice lemons. Whisk in dijon mustard & olive oil. Season with sea salt & freshly ground black pepper.

Step 4

Heat grill to medium-high temp and oil grates. Grill asparagus for about 5 minutes, turning mid-way, so that it has char marks and is crisp tender (this means cooked, but still has a little snap to it). Grill foil packet of scallions/ramps for about 10 minutes.

Step 5

Plate asparagus and top with scallions/ramps. Drizzle with lemon vinaigrette.
