Guacamole and Salsa

Fresh guacamole and sweet cucumber-mango salsa are the perfect additions to Turkey Tacos.

Guacamole

Homemade guacamole takes minutes and tastes best when it's fresh. Interesting fact: Avocado is a stone fruit (the same family as mango) and is sometimes referred to as The Alligator Pear.

Ingredients

Yield: 8 servings
  • 4 ripe avocados
  • 1 jalapeño pepper, deseeded & minced
  • 1 lime, juiced
  • 1 garlic clove, minced
  • 1/2 C chopped cilantro
  • sea salt and freshly ground black pepper to taste (start with about 1/2 - 1 tsp each)

Instructions

Step 1

Cut avocado in half, remove the pit and scoop out the flesh. Mix with lime juice. Smash in mortar & pestal or in a bowl with a mixing spoon or potato masher.

Step 2

Mince the jalapeños & garlic. (Cuidado/Caution: Jalapeños can be quite spicy. The heat is in the seeds. Wear gloves when working with hot peppers. ALWAYS wash your hands with cold water after you touch them...and avoid touching your eyes!)

Step 3

Combine all the ingredients & season with salt & pepper.


Notes

To prevent browning: place pit in center of guacamole and squeeze lime juice on the top.

Cucumber Mango Salsa

Mango and cucumber are an excellent combination of sweet and crunchy. Perfect with chips, tacos or on a salad.

Ingredients

Yield: 8 servings
  • 1 mango, peeled & diced, about 3/4 C
  • 4 scallions, white part only, thinly sliced
  • ½ cucumber, large, seeded & diced, about 1 C
  • ½ red bell pepper, seeded & chopped
  • 1 jalapeno Pepper, seeded & chopped
  • 1 lime , juiced
  • 2 T mint, finely chopped
  • 1 tsp sea salt
  • ½ tsp black pepper

Instructions

Step 1

Chop all the vegetables into small dice.

Step 2

Juice lime & remove seeds.

Step 3

Pull leaves off of mint stems and mince (rock & chop).

Step 4

Combine all ingredients.

Season with salt & pepper.
