Mac ‘N Cheese that is Green & Gouda

Think out of the ice box and combine leftovers to make a mac ‘n cheese that is genuinely “gouda.”  Don’t get stuck in a rut…macaroni can be so much more than the orange stuff that comes out of a box.  This past week was filled with great stuff to top off any pasta: a little bit of sautéed spinach, a few dollops of arugula pesto, and some grated gouda and parmesan cheese…now that is my kind of mac ‘n cheese.
