Beet Chips
Beets can be a love it or hate it type of veggie, however EVERYONE loves chips. This recipe is simple and you will want to make it often, because the chips will disappear quickly.
Plus you can't "beat" the nutritional value of this root as it's filled with vitamins and minerals including folate a.k.a. vitamin B-9 (good for the brain's emotional and mental health).

Yield: 2 cups
- 6 large beets, peeled & sliced into 1/16" rounds
- 1 - 2 T olive oil
- salt & pepper (to taste)
- 1 T za'atar

Method
Step 1
Toss all ingredients together.
Step 2
Line baking sheets with parchment paper and place beets in single layer (do not overlap).
Step 3
Bake in 350 degree oven for 30 minutes. Ends will curl up as they bake to indicate they are ready.
