Protein Packed Nut Butter Treats

Admittedly, I don’t even consider getting into the car to shuttle my kiddos to school without a cup of coffee…BUT some mornings there just isn’t enough time to sit at the table for a proper breakfast.

That being said, the idea of a muffin just doesn’t cut the mustard to start my engine for the day.  That’s why I keep Peanut Butter Balls in my refrigerator ready for a grab and go breakfast or snack.

These are sure not to disappoint.

Peanut Butter Power Balls

My sister-in-law Carol turned our family onto this protein packed peanut butter snack. It’s dense, but great for grab and go treat.

Ingredients

Yield: 16 pieces
  • 1 C Steel Cut Oats
  • 1 Scoop Protein Powder
  • 1/2 C Honey
  • 1/4 C Ground Flax Seeds
  • 1/4 C Chia Seeds
  • 1/4 C Unsweetened Coconut Flakes
  • 1/3 C Dark Chocolate Chips (optional)
  • 1 C Peanut Butter
  • 1 tsp Cinnamon

Instructions

Step 1

Combine all ingredients until thoroughly mixed together. Refrigerate at least one hour.

Step 2

Roll into golf ball size shapes (approximately 16). Store in refrigerator in a sealed container for up to 1 week.

Notes

Short Cut: Make one day ahead of time, and store in airtight container in refrigerator for 7 – 10 days.

Think Out of the Ice Box: Try using almond or cashew butter instead of peanut butter.
