Spring Spinach in Minutes

Spinach is in it's prime in the late spring. It is a superfood loaded with iron and makes a wonderful salad or side dish. This sautéed dish is ready in minutes.
Ingredients
- 8 cups spinach
- 4 scallions or 1/2 chopped sweet onion
- 2 T unsalted butter
- a few pinches sea salt
- 1/2 tsp freshly ground black pepper
- a pinch of red pepper flakes
- juice of 1 lemon
Instructions
Heat butter in saute pan over low heat.
Add scallions and stir constantly for one minute.
Add spinach and stir.
Season with sea salt + freshly ground black pepper + pinch of red pepper flakes.
Add 1/4 cup of water and cover.
Squeeze lemon juice over spinach and serve.
