When you have leftover chicken, make chicken salad.  It’s perfect for a picnic. This recipe doesn’t use mayo and the tarragon gives it a unique flavor.

Ingredients

Yield: 6 cups
  • 4 C chopped baked oregano-thyme chicken breast [see recipe above]
  • 1 C sliced seedless red grapes
  • 1 C sliced celery
  • 1/2 C raw pecans
  • 1/4 C vegenaise
  • 1 T dijon mustard
  • 2 T chopped tarragon
  • a few pinches of freshly ground Black Pepper

Instructions

Step 1

Mix vegenaise, dijon mustard and tarragon together in a bowl. Add chicken and mix. Add celery, grapes & pecans and combine evenly.

Think Out of the Ice Box: This is using leftovers to create an entirely new dish. And did I mention it takes less than 10 minutes?!
