Winter Warm Up Luncheon

The winter chill is in the air, and Sundays are ideal for warming up by the fire and slurping hot soup.  And, what’s better than doing that good friends?

Jen and Gloria joined me for a delicious lunch of Tomato Dill Soup

Arugula Salad with dates and avocado (click here for recipe: replace Romaine with Arugula; omit the red peppers)

For a heartier vegetarian meal, pair this with a quiche.

Simply use the Zucchini Cheddar Frittata recipe and pour into a defrosted whole wheat pasty pie shell.  Bake in the oven at 350 degrees for about 20 minutes or until cooked though.
