• 1 peach, diced into small pieces (about 1 C)
• 2 scallions, white part only, thinly sliced
• 1 small cucumber, seeded & diced (about 1 C)
• 2 ears roasted corn, cut kernels from cob
• 1 jalapeno Pepper, seeded & chopped
• 1 lime , juiced
• 2 T chopped mint
• 2 T chopped cilantro
• 1 tsp sea salt
• ½ tsp black pepper
